Ingredients

Spray oil for cooking

100g chicken mince

400g can diced tomatoes

1 carrot, finely chopped

¼ onion, chopped

½ cup (60g) frozen peas

2 tbsp risoni

Step by step

  • Heat a small saucepan over medium heat; add mince; cook 2-3 minutes or until just cooked through; add tomatoes, carrot, onion and peas; cover; bring to the boil and simmer 15 minutes.

  • Meanwhile, cook risoni according to direction on packet; serve with ¼ cup chicken sauce.

    TIP:

    Remaining chicken sauce can be placed in airtight containers and frozen for later use.
